My bf just moved to MD for jobcore but he is coming back for a weekend on our one year anniversery. I had a couple of ideas in mind, like making dinner and having candels n everything on a rooftop, laying in the grass watching a sunset, ect. BUT something has gone wrong with everyone of my plans! Here is the thing though, i dont exactly plan to major in any cooking classes when i get to that stage. ANY IDEAS AT ALL? please? he is 17 years old.

keep it simple. either repeat your first date, cook his favorite that he doesn't get to have often, take him to some place you / he / you both have wanted to go that you haven't been, Cheesecake Factory always works, and if all else fails: ask him for suggestions.
