it's too acidic. The jello won't gel

Because something about the juice makes it so that the jello doesn't set. It actually says this right on the jello box. I don't know WHY this is, but check out a box of it next time you see it in the store.

Because you need to take the time to let the pineapple maserate in a sugar solution and then pat it dry first and like you have already been told people are too lazy.
