Chicken is an easily raised stock of meat. In Africa is it more widely used as form of currency as well. The preparation of using precious 'fat' from beef or pork to batter and fry chicken is centuries old cooking from Africa. It was used as a form of preservation. A piece of fried chicken, battered and fried can last upto 2 days without refridgeration and not cause illness. This ingenious method of cooking and preservation was noted in black slaves. It's difficult eating and messy handling never caught on with those who could own slaves; however caught on well with the lower class americans. As opportunities and cultures grew together, the 'fried chicken' is now not just for the black american community but for everyone. Those who are bigots and think they are superior to blacks will use this as an example of their slave roots. It does offend black americans, but as for me, I am not offened to be called a 'fried chicken eatin' *****".

Prolly started because chicken is so available and inexpensive; it's an economy issue many times rather than a cultural one. I notice in the grocery store that people of other cultures are buying chicken too; especially when the price of gas is sky high.
