There could be many reasons for this. I'll only list one as it's the only one I'm well-informed about. That's your breathing technique. While exercising, you should always keep a constant breath-pace. Increment should be done gradually, hence, a warm up.

I'm not sure what kind of climbing you are doing but taking a wild guess, I'd say you do some mountain climbing, which is aerobic, just like running. There's always a tendency to hold your breath while you physically push your body. That causes shortness of breath.

My answer, in a nutshell, to your question is to practice breath pacing.

Sounds like exercise induced asthma. Exercise is the number one cause of an asthmatic episode. When you become out of breath, your lungs become hyperresponsive and over constrict making it even harder, causing wheezing, coughing, and shortness of breath. You will need to see a doctor who will test your FEV1 or PEF. You will take a rapid acting B2-agonist (bronchodilator) and then retake the test (which involves inhaling completely and quickly blowing as hard as you can for 1 second. If your PEF improves after the bronchodilator (Albuterol) by 15-20% you will be diagnosed with asthma. Since yours is exercise induced, you might have to run for 6 minutes on a treadmill prior to taking the test. It is best to get tested soon because your condition could worsen with time and need more drugs like gluccocorticosteroids.

I've found it doesnt have to do much with being out of shape, Seeing as during my active part of the year (summer-Midwinder) I have the same problem. So it matters on exactly how your working out (woot for aerobic excercises)... hence if your running short distances and being out of breath your probably sprinting...try jogging... or sprint more often to get use to it...

Shortness of breath can be cause by different things.
Being out of shape, smoking (#1), not used to exercise, or can be more serious. My advice, go see a dr. have your heart and lungs checked. Explain to him what is goin on when you exercise. Hope this is helpful.
