I had the same problem when trying to get cheap flights to S. Africa - flying to Johannesburg and returning from Cape Town. The way I arranged that was:
- I went to www.travelsupermarket.com and checked there which web sites (like opodo, expedia, lastminute etc) offer the best prices for flights to those cities.
- I made a note of the site and the airline that offered the best deal
- I called the airline directly to check which was the best deal they could offer.
- I called the telephone number of the web site which offered that deal (Airline Network - the reason for that is that not many web sites which offer the best prices have the multi-trip option available when doing the internet booking)
- I compared between the web-site and the airline and chose the best option.
Just to give you the idea on how much I saved:
- price with the airline - around 650 pounds
- best price on pages like expedia or opodo - 550-560 pounds
- best price from an agent who advertised in SA Times (he really tried hard to get the best possible deal for me) - 513 pounds
- the price I got when called Airline Network, recommended by www.travelsupermarket.com - 469 pounds!!!

I've done multiple destination trips before. The best thing to do is to buy a roundtrip ticket, even if you're not going to use half of it. What I do is buy a roundtrip ticket, but make the two halves of the trip at least one month apart - this tends to lower the price. It's sometime to get a roundtrip that's one month apart than to get a one way ticket.
So book a London to Miami, departing on Nov. 25th - and then returning in January or February of next year (maybe even later than that). And then book a New York to London on Dec. 3 and do the same thing.
Otherwise, book a London to New York, roundtrip, departing on Nov. 25th, and then returning on Dec. 3rd. Then buy a roundtrip from New York to Miami, departing Nov. 25th and coming back whenever (you don't need the last half anyway) - this can be less than $200 if you book early enough - it will be much more expensive if you do it one way. Another tip is to fly through Newark - it tends to be a little cheaper.

The best thing maybe would be to buy two return tickets. One from London to New York, and one from New York to Miami. It will probably work out cheaper in the end than buying a multiple city option. You could have a schedule like this.
November 25th: London to New York, New York to Miami
Then Miami to New York on whatever day you planned on travelling from Miami to New York.
December 3rd: New York to London
