Viva.... Las Vegas!!!
Oh man, congrats on your anniversary.
Well, since you are staying at the Venatian, which by the way is the absolute best choice to make, the first thing I would recommend would be to go to the Canyon Ranch spa in the hotel. My wife and I go there and we've gotten the two by two stone and the aromatherapy. I promise, this is the absolute best spa in Vegas, and yes I'm speaking from experience.

As for anything else, well, you can also go to see Hoover Dam, which is about an hour south. (http://www.usbr.gov/lc/hooverdam/)
You can also go to Nellis AFB, which is where many of the nuclear weapons we have, were tested, and they have tours and so on. Obviously its more geared towards your husband. (http://www.nellis.af.mil)
As for shows, well, its depends on what you would want to see. You have the Blue Man Group, La Femme (which my wife loved seeing), Celine Dion, Howie Mandel, etc... I mean the list really does go on and on. (http://www.vegas.com/shows/?f=m1hp&t=mentt) and just input the dates you'll be there.
If you have the time, and dont mind the lame sales pitch, you will be offered a free show or something when in town, either at your hotel, or at other casinos. Like I said, if you have the time, and dont mind wasting a couple of hours, go to the sales pitch for the time share, say NO to anything they offer you, and get the free show. We've done it and last time we had plenty of time and it was'nt so bad. And besides, its a couple of hours you dont spend gambling your money away. LOL.....
As for dining, I have to recommend that you go to Mesa grill in Caesars Palace, its Bobby Flay's restaurant, and its so worth it. Also, I know its a guy thing, but last time we went, I got my wife to shoot an M-16 at this gun shop for her first time, I believe its on Flamingo Rd. But hey, its more a guy thing, I know. But you can shoot M-16, UZI, AK-47, etc... Or of course you can also go riding roller coasters, like the one at New York New York, Nascar, The Stratosphere, Circus Circus.
And finally.... when you get there.... the casino.... they all have them. Just sign up for the players club, they all have different names, but sign up and you'll get notices and if you play enough it can get you comps, free stuff, etc...
Since you are going to be at the Venetian, you wont be too far from too much. The Belagio, is about 1 block away, Caesars is across the street as is the Mirage, Treasure Island is next to that, and across the street is the mall, and 1 block north of you is Wynn, the newest casino there. You are pretty much centrally located to most of what the strip has to offer.
As for the weather, plan on it being beautiful, in the mid 80s and down to the mid to upper 50s at night.

Blue Man Group in thier new theatre at The Venetian, go to Emeril's Delmonico Steakhouse, and do not miss the Gugennheim/Hermitage Museum also in your hotel. Top of the World restaurant is amazing at the Stratosphere, and a good place for your anniversary dinner. Carnival Bar outside on the strip at Harrah's for a great fun time (tell bartenders Flippy and Kevin, that Joe from Ilinois sent you). Zumanity at NYNY is adult done tastefully and out of this world. Big Apple bar for a drink afterwords. Bellagio's Gallary of Fine Art is featuring the life of Ansel Adams, some of the best photography in the world! If you only have 4 days, you'll be back. The strip at night is beautiful. Do a little planning and have fun. It's hot out there right now, nights are a little cooler. Dress up one night for dinner, rent a limo and take an evening drive on the strip and go downtown to see the Freemont Street Experience, you have to see this and get a sense of old Vegas too.

The best thing about Las Vegas is you can wear whatever you want. Weather-wise, it will be warm during the day, but super cool at night. So, you kinda need both shorts and pants. If you are going to a show, it is typical to dress up a bit - not prom dress or anything, but a nice evening out. During the day, wear comfortable shoes because you will do a ton of walking and comfortable clothes that show your style. Vegas is all about style whatever it is.
Shows:
Mama Mia @ Madalay Bay - Abba is the music used, it is a super funny musical (I am not into musicals and my husband and I loved it!)
Mystere @ Treasure Island - Cirque du Soleil - It is a really good show. You could see it more then once and still not get bored.
Blue Man Group @ Venetian - Super good show - music is super loud - my mother and father-in-law plugged their ears during the show. My husband and I enjoyed it.
Restaurants:
There is a restaurant every 5 minutes (30 sec even!), you may look at the suggestions to ensure one good one, but likely you will end up walking around so much you will go to the first one you see with the menu and prices you like.

Two words...
BLUE MAN!!
Excellent choice of hotels for a first timer. You will love it! The Venetian is very beautiful. The restaurants in the V are expensive though. If you have the budget, you'll be eating mighty fine right there where you're staying. There are nice places in the Canal Shoppes area where you sit in a faux outdoor setting. Very pleasant. There are also several fine restaurants downstairs in the same area as Blue Man performs. I looked at one menu, items were $32, $36, and so on, and those were just the appetizers. I noticed lots of couple dressed to the 9s, very high end clientele.
The weather should be warm. Shorts during the day, maybe more dressy at night depending on where you choose to eat. I doubt you'll need a jacket just yet.
Final word: Pace Yourself!

Blue Man Group is a great show to see. It's at the Venetian, so you'll be right there.
I've never eaten in the Stratosphere or the Paris, but I believe there are restaurants at the top of both hotels, so I'm sure the view would be amazing. I would recommend dressing up a little for these restaurants.
If you're visiting in October, you shouldn't need jackets/sweaters. You'd be fine in shorts and short sleeves.

You don't have to dress nice while you are there but allot of people do. Dress however you will be comfortable. Best show in town is the blue man group by far. Make a visit to the NY NY hotel, its really cool inside. Visit the piano bar in there, it's always fun. If you like roller coasters go up to the top floor and ride the roller coaster that goes around the outside of the building. The pool at the hard rock cafe hotel is pretty cool to see also. Also go see the water show in the evening outside the Bellagio.

If you are going to be in Las Vegas over the weekend, the best brunch in town is only open on Sunday beginning around 11 am. It is the Sterling Buffet at Bally's. Dress nicely for it. It is upscale in the quality of the food (lobster, crab claws, rack of lamb, filet mignon) and the quality of the champagne (Pierre Jouet). The cost is around $55 per person.
This is not an everyday event so take advantage of having a great time.

I had christened "Las Vegas -the World under One Sky" and for good reason, of course. . . it's all there- from the New York skyline to the Eiffel Tower to St. Marks Square, which incidentally is a great rendition -I had been to Venice).
The weather in Vegas is warm, so dress comfortably during the day and perhaps dress up a bit at night....

Dont' miss the water show at the Bellagio, any show by cirque de soleil is AWESOME i've seen mystere and zumaity and they were both incredible! I stayed at nyny and that entire hotel is full of fun stuff to do. the pirate show at treasure island, and just seeing all of the hotels is fun in itself. cesars has the most nice shopping, but it's all so much fun!! bring a jacket, because it'll probably be chilly at night. have a great time!!!

Drive down to Hoover Dam - it's a great sidetrip - go early in the AM as it gets busy as the day goes on...take a camera and enjoy!
Weather will still be warm - sometimes gets cool in the evenings (60-75)-especially late in the year....
