Dedication...Long hours....being able to sleep only a few hours a night....you need fairly good math skills for inventory and food costs..you need to be able to read, create and convert recipes.
you must have some leadership skills in order to keep your kitchen running smoothly..
you must have a creative heart and you must truly love the kitchen.
besides that...
culinary knowledge would help.

As an Area Manager for a restaurant company we have never looked for formal qualifications, tenacity, personality, dedication, willingness to learn etc are far more important.

Some good companies will also pay for you do do part time courses, whilst working for them.

I have never asked anyone whether they are a 'good cook' in an interview but you will be asked about what type of foods etc you enjoy eating / producing.

If you want to become a professional chef then you need to obtain NVQ 7061/7062, Various colleges do these qualifications ask your local college for a prospectus.

If you're talking about being employed by a restaurant, then, yes, just cook. A certificate or two, as well as references won't hurt. If you're talking about starting a catering or similar business out of your home, then you need to contact the health department. They need to come and do inspection of your home before you can register your business (similar process is done with at-home daycare providers).
