I live in New Jersey and I have an apple tree that bears fruit, but it is decorative in the back yard so I don't care if it gives fruit or not.

I live in California. I was taught that one should trim fruit trees in the latter part of February or the first part of March. The temperature should be above freezing. Here's a link with info about specific kinds of trees...

February is the best month, but never trim off more than one third of what the tree grows during a season, or it will not produce fruit for you. The exception of damaged or broken limbs. They need to be removed right away. Don't forget to seal those to protect from insect damage.

The best time to trim your tree is after it is done giving fruit.

I always trim my trees after they've leafed out. That way I can get any dead branches out. Plus also get rid of branches that are rubbing.
