Depends on what night you are going to go. You can find a room on a monday night for as little as 44$ a night at the Sahara, to as low as 150$ a night on the weekend at the Luxor. It really depends on when you are going to go.
If I may suggest where NOT to stay. If you dont smoke, try to stay away from the Tropicana, Excalibur, Golden Nugget. Some suggestions are, if you can get a good deal, The Stratosphere, Mandalay Bay, The Hotel, Luxor, NYNY, Paris, Venetian, Wynn. Like I said, IF you can find a good deal. Start by going to Vegas.com and then try comparing the prices with the hotel's website, you never know, you might save a few bucks here and there from the hotel's website.

for $200/night you can get almost anywhere you want. Paris, Monte Carlo, Harrah's, Flamingo, Mirage, TI, NYNY. Save money on the room (for about $60 you can stay at the Imperial Palace center strip) and spend your money on a good time at a show and eat the best food in the world.

The Excalibur is a nice hotel, it is on the South End of the strip, between The Luxor and NY NY. We had a suite with a jacuzzi tub for $176.00 a night.

If you are flying, they have so many wonderful packages air/hotel package. I know the stratosphere isn't too expensive. We didn't stay on the strip, we stayed at the Golden Nugget (after the renovation it's beautiful) and it's only a busride away. Plus you can see the lasar light shows each night.

www.vegas.com I found the best deal there. $200 a night including airfare for Treasure Island, and about $20 more, for NYNY.
BTW - San Remo is not on the Strip, it's just off of it, and it's now the uber-tacky Hooters Casino.

For just over $200 a night, you can impress the hell out of her at THE HOTEL at Mandalay Bay. Great place. Stay the hell away from The Excalibur, which is too seedy for words.

I assume you do not need airfare. If you do, then Southwest vacations is the best deal. (swavacations.com)
Otherwise, try for a room at the Flamingo Hilton, Harrahs,Monte Carlo, or Treasure Island
There are web specials for rooms that are available mid-week
Look at the websites for the hotels and check their calendars for rates on specific dates
