Putting your arms behind your back when speaking to your head of department or employer is a common way in africa. How can such a behaviour be viewed in Europe or london?

As a former boss, I only respected people who approached me as an equal partner who just happened to be temporarily at a higher pay grade.

I didn't want people who didn't feel equal to me.

So, I would recommend to not use any body language which would convey a message of vulnerability.

It would show a relaxed posture and maybe not the best in this situation. I would recommend if standing put arms forward as with holding a paper or using your arms to help explain. Now while doing this if you want to show superiority while doing this keep them facing them down but if you are trying equally and trustworthy then palms up. If sitting hands the same way but lean forward to them.

Such body language demonstrates submissiveness.

If you want to be seen as a doormat, by all means, go for it.

Just keep your hands where it's comfortable or at your sides, never in your pockets, nor by crossing your arms.

In any society it shows that you either trust the person your talking to and/or you don't fear them. By placing your hands/arms behind your take your opening yourself up for a possible attack, so if you do that towards someone, that's showing that you do not fear there attack or you trust them enough for no attack to occur.

It's DEFINITELY proper to do when speaking to a superior at work.

It shows a sign of respect to whom you are to speaking to, when you place your hands behind your back.
I think that it depends on who you work for. They may be professional enough not to even try to manipulate you or take advantage of you in anyway. Or they can seem to be professional but ....
Me myself i just have my hands next to me. I used to place them behind my back when i was younger, until i started getting taking advantage of and feeling my work wasn't getting the reconition that it deserved. I had to quit.
So my body language sure changed for the next job. I didn't send off any signs of being submissive. Nope. I just came hear to do my job not kiss your azz.

They need to see your hands. If i can't see your hands, or they are behind your back, how do i know you don't have a weapon or stealing something. don't make a fist. it is ok to turn palms in or out depending on how the interview makes you feel.

You should keep your hands at your sides and lean just slightly forward to show interest in the other person

generally it is viewed as being trusting of the person you are speaking to as you have left yourself vulnerable
