It's slang for psychoanalyst. It was derived from the term headshrinker. It is based on a metaphor that evokes an image of a head-hunter who preserves shrunken heads just as a psychoanalyst attempts to preserve a patient's sanity.

It's short for "head shrinker" , which is a slang name for a physician who specialises in psychiatry, a psychiatrist.
The original head shrinkers were primitive people who were in the habit of cutting off the heads of their enemies and preserving them in a shrunken state. Examples were to be found in the Amazon and in Papua New Guinea.
