You can pick up a decent Fireblade for that. May be a bit old now but still a force to be reconed with, and a sexy looking machine. My mate just got a minter for £1200, so there you have it, a large capacity muscle machine for just £1200, I might get one myself.

Assuming you are not hamstrung by some cc limit, go for a large capacity (750cc+) jap with the lowest mileage you can find - there are plenty of "not used very much" machines around - and a service book that has been stamped by the dealer. Make sure it hasn't been modified from standard. Personally I'd go for a Yam or a Kwak, but they are all pretty bullet proof.
The sportiest bike may not be the best on which to go nice and quickly. Sports bikes have to be revved hard to make them really go and on most roads this is not as easy as riding something with a bit less power, but a lot more torque lower down the rev range. Handling is critical too. If it doesn't handle the horesepower is useless. I've had a lot of very quick fun on some old Moto Guzzis, but I don't know what they cost over there and here (D) they are not so cheap.
PS. What's the insurance going to cost you???
PPS. A Piaggio is neither sporty nor a bike. It's a type of boat anchor.

I sold my Triumph 750 Tiger for 300USD. It's the sexiest bike there is. Ever see "Officer and a Gentleman"? One day I was biking with my gal and I was fueling up when some guy comes up to me and says she sure is pretty. My girlfriend smiled and said thanks and he said "I meant the bike". She says " I could just hit him" as he turns and walks away. I chuckled.

Another time I was biking in the mountains and I stopped for a snack and a huge bus load of Japanese tourist had their bus driver stop so they could get out and photograph it.
