The reason you fell cooler is that water is evaporation from your skin. Evaporation is when water changes states from a liquid to a gas and it give up some of its energy in the form of reduction of heat or as we say cool. This is the basis of air conditioning were we put the gas (older style freon) under pressure to create a liquid and then allow it to gas off in condenser. As it converts to a gas the cooling effect takes place.

usually it's because the pool is warmer than the air. when you get into the pool it doesn't always feel that way because you have to get used to the water, but if you get out and feel colder, that's because it is.

I's because the air hits the water on your skin, which makes the air feel colder. The same principle as why you feel coller when you sweat.

Water on our body is using the heat energy from our body to evaporate. That's why you feel it most when there's a draft, too - the moving air gives the evaporated moisture someplace to go, so the air immiediately around your body can absorb more evaporated moisture.

The water on your body evaporates (turns from liquid to vapor). This change in form requires heat energy from your skin, which leaves your skin feeling cooler.

Evaporation requires energy. Part of the energy for the evaporation comes from your skin so you feel the cold.
Same thing happens if you put alcohol on your skin. When it evaporates you feel a cold sensation.

evaporation - when water evaporates it draws heat from the surface of the skin and releases it to the surrounding air
( that's how sweat cools the body )

when water evaporates(turns into air moisture) it requires some heat energy which it "takes" from the surface it leaves ie. your skin...
The true physics of what happens is a little more complicated but that's the jist of it.
