The rear seats in most coupes are quite uncomfortable. I was once in the rear of a Porsche 911 and you couldn't even sit upright! Back to your question: It is definitely not an easy job to change the seats. And it is even harder to find seats which will fit. You really have just two options: Spend mega money(£1000+) and get some custom-made seats, which will be nice but it will leave the car non-standard with implications in regard to resale value and the legroom will still be cramped/insufficient.
The other option is to tell your girlfriend how much you love her, propose to her and then persuade her to get a saloon in view of the forthcoming family ;-)

Rear seats in a sports coupe are for decoration, not for serious use. A custom upholstery shop might be able to do something for you, but it's not a DIY bolt-in swap.

Better option: Recline the seatback of the front passenger seat. Much more room for the old slap and tickle that way.

Rear seats in sports coupes aren't really designed to be used for any extended time period. And no, they can't be changed easily. You want more comfortable back seats, go to a 4 door sedan.
