I have seen this in sociology/psychology type texts but don't know if it would be appropriate anywhere else. The dialog was limited, not like a script or anything.

Are there any writer's guidelines or samples of case studies for this text? I've seen several case studies with dialog (especially in speech, language and communication textbooks), but some prefer a less "personal" approach.

I have seen some dialogues in management text books. G for it. Just keep them short and to the point.

case studies sometimes have time samplings, direct samplings and anecdotal incidences to back up your case study findings so I would say yes you can use it to show an example of your subjects behavior.
