The Tibetan Plateau or Chang Tang, also known as the Qinghai-Tibetan (Qingzang) Plateau, is a vast, elevated plateau in Central Asia covering most of the Tibet Autonomous Region and Qinghai Province. It occupies an area of around 1,000 by 2,500 kilometers, and has an average elevation of over 4,500 meters. Called "the roof of the world," it is the highest and biggest plateau in the world, with an area of 2.5 million square kilometers (about four times the size of Texas or France). The plateau was formed by the collision of the Indo-Australian and Eurasian tectonic plates in the Cenozoic period (approximately 55 million years ago), in a process that is still ongoing.

There is NO country with the nickname "roof of the world". The Tibet is now a part of China. Nepal has no such name as roof of the world.

I didn't know the roof of the world referred to a country but I have heard the Himalayas called this and they include Mount Everest, so I guess it would be Nepal

Nepal. Although Lesotho which is known as the Mountain Kingdom is the highest (entire) country in the world, i.e. its lowest point, Maseru, is higher than every other countries' lowest points.
