Basically, does my current employer (in UK) legally have to give me the time off for interviews now I've resigned? I've heard they do but I want to be sure. Thanks

I do not know the UK situation and hope someone gives you the answer.

In most countries they do not HAVE to give you leave in your notice month (Especially where you resigned). There is however not much they can do to you if you just stay away for a day or two. It only depends how important your employer/employee relationship is to you.

With rethrenchments , different rules apply.

You cant just say look I quit oh by the way i need certain days off to go for an interview for a new job... be smart. try to schedule on you lunch hour or after work. do try to be mindful of the job you are leaving behind. but if you want honesty..... why are you giving notice if you don't have a job already. kind of irresponsible. in most countries they are not obligated to give you time off to find a job..
