Take the best ones you can afford, but Canon make a lovely pair of compact waterproof (i.e. also dustproof) binoculars for around 300 usd, I've had a pair for 8 years, look for WP after the magnification figures and you've got a good set.
Of course, if you can afford Leica, they are the best and also make waterproof, but at 2-3 times the cost.
You're better off with a really good quality, serious zoom digital video camera!

An ultra-compact 7 x 35mm should do nicely. Your safari guides will have more powerful instruments for the group to use should they be necessary in order to show you more detail in, say, an exotic bird or a distant pride of lions. Hey, have fun - that should be the trip of a lifetime!

If you have around $1000 to spend, a WONDERFUL pair of swarovski binoculars. They are great for logn distance things. I ventured into tanzania and kenya 2 summers ago. Have fun!
