That person is called a proctor.

Quite often, if a student is taking a correspondence course, they will be required to find someone to act as proctor for their exams. I have done it several times for people. Basically, you just make sure they don't use outside sources or go over the time limit, and you sign a paper stating that you followed the rules, and that they did as well.
