I'm having a hard time deciding which numbers to use for the Y-axis of my graph. I only have one spot and the numbers that I need to plot range from 0.001 to 2.0 and I don't even know what numbers to use. Please help.

Why not go from 0 to 2.0? then you can go from 0.010 and then 0.020 and so on. Depends on how much space you have left.

I would personally go from 0 to 2.0.

But, your teacher might have other preferences, such as "you must have at least one negative number" or "you must go beyond your maximum number" or something like that.
