When I try and download a demo or a video on my 360, then try to play a game it tells me that the download was stopped. Is there anyway to keep the download going while still playing?

Some games will allow you to do that (usually Arcade titles), while others won't (usually retail titles). Usually you'll notice this with games that have some form of online multiplayer. For example, downloads will continue if you play Geometry Wars (single player, only uses Live to upload scores), while they won't if you play Saint's Row (has a multiplayer component, so it prevents downloads from stealing bandwidth it needs for multiplayer).
Generally, I don't mind so much. I'll play some Geometry Wars or Hexic, or flip over to cable and watch some TV while waiting for downloads to finish.

there is a new xbox live update that fixes this. it allows you to download while doing other things on the 360
