You can change matter into energy, that's easy enough. However, in the process the energy is lost to the great wide universe, unless you can capture it. I would just use some other energy and pretend the matter I made with it came from the original source.. WHo would know?

We can turmn matter into energy in a nuclear reaction -- fission or fusion.
We turn energy into matter in an atom smasher -- a cyclotron. We accelerate protons faster and faster (giving it more energy), and we collide it with protons coming the other way. We find particles of even greater mass flying off after the collision.
