i have read lots of questions from women who want their men to communicate more in the relationship. i listen to anything that my g/f has to say and trust me she is quick to point out my faults. however if i say anything to her im putting words in her mouth, etc.... also why is it that if a man talks about sex with thier g/f this also makes them mad

Because as much as they wont admit it, women are not into communication as such. A woman is into you hear her out, agree with her and do what she wants, when she wants, how she wants. Basically, you have to agree with her.
Women are not into logic or reason or anything. They are into what makes sense to them and what they feel or think logical. If you wont agree, you are just a pig or stupid.

Women use language differently than men. Men use it to argue in the traditional sense of trying to come to an agreement. Women just argue until they are right. If you don't beleive me you should spend more time with large groups of women. Its very enlightening to see a half dozen of them try to figure out where to have lunch. Some body is always emotionally hurt. I feel sorry for them.

you have an odd girlfriend. Talking about sex making a blokes girlfriend mad? - are you serious?? You know, I used to have a friend up until quite recently, and she would only have sex with her boyfriend when she wanted a car or a holiday becassue he pestered her 24/7 (understandibly as he wasnt getting any) she didnt like sex plus he used to hit her and she was also doing it for revenge. Payback.
Maybe relate would help you and youre girlfriend if youre serious about wiorking things out
