The general answer is he/she coordinates and supervises whatever needs to be done. It depends on the kind of event. Some people specialize: weddings,family or class reunions, graduations etc. My daughter is an event coordinator for a college. Each semester she supervises recruitment and orientation of new students, homecoming events for alumni, job fairs etc. She participates heavily in planning, delegating, checking and double checking to make sure everything gets done. No matter how much planning is done, there is almost always some kind of emergency. She is the one that gets to deal with these emergencies such as getting a plumber at 1:00 a.m. , finding alternative sleeping arrangements when rooms get overbooked etc.
So, to do well on this job, you need to be calm in a crisis, super organized, tactful, yet assertive with people, knowledgeable about the organization/event... did I mention calm in a crisis?
My daughter got her BA counseling and her MA in college human services. No doubt there are many other routes to get these positions, especially wedding or reunion planning. You know yourself the best. What are your interests and strengths? Most colleges have questionnaires and surveys to help you identify these things. Often they are free. Perhaps that might help you sort things out. Also, if you are going to college, take advantage of school breaks to do internships or assistantships in fields that you are thinking about entering. If you're interested in being an event coordinator, you might want to look into majoring in hospitality or recreation (some schools might have emphasis/option in the business aspect of recreation).
Event Coordinators can do all sorts of different events including: wedding planning, engagement parties, birthday parties, baby/wedding showers, anniversary parties, graduation parties, and even memorial services... the possibilites are endless.
