well, for one thing it helps us know where we are forecasting!
also, latitude and longitude is important to meteorologists that write computer models to make a gride (map)

it helps them pin-point the location of a storm or something at a certain time. Ex: a thunderstrorm located 23 degress north and 80 degrees west.
