does the person performing the bikini wax see her privates? or does she get to cover her privates with something so that the only thing the employee sees is her pubic hair (which she is waxing off)?

They don't see anything but the hair they are waxing. So wear clean undies!!! The only time they will see everything is if you are getting a Brazilian.. and if you are getting that, then the LAST thing on your mind is "will they see" LOL

If they tell you to get naked, then I suggest you leave immediately!! Actually some places will tell you to put on a pair of paper panties so that your panties won't get ruined by the wax. If you feel uncomfortable you may ask the person who is doing your wax for a towel. Sometimes a phone call prior will answer your questions.
I also recommend not to get waxed right before or during your period. Your body is more sensitive. An Advil or Tylenol and hour before helps alleviate the pain.

THEY HAVE TOWELS THEY USE TO COVER YOU WITH. IF YOU'RE GOING TO GET A WAX SO YOU CAN SHOW IT OFF WHY DO YOU CARE IF THEY SEE YOUR PRIVATES?
