How funny I just saw a show on this yesterday. Martha Stewart says to burn a low candle near where you are cutting. It also helps a little to wear glasses. I cook with onions all the time and just walk away periodically. The noxious fumes are caused by a gaseous sulphur compound released when you cut into it.

Two things. Either 1, wear glasses or contacts. Weird but it works. 2, cut only one side of the onion instead of both. slice the onion carefully in the palm of your hand being careful as not to cut all the way to the bottom. Make your slices, in both directions if you want finely chopped onions, otherwise slice in one direction. Then, lay the onion on the cutting board and make you slices, no tears, simple as that.

Cutting onions releases a gas. To reduce the effects, light a candle next to the cutting board. The candle will consume the gas and reduce the painful effects to your eyes.

Easiest way to stop the whole eye watering business is to hold the onions under running water while you cut them.

Certain chemicals in the onion causes irritation.
Two options.
Wear goggles
Cut the onion under water

OMG! i just read in a book that if you cut them in your sink, or around water it will make it worse--so cut them in a very dry area. And the onion citric acid is very concentrated, so when cut, little pores of strong juice float up in the air and sting your eyes. So cut them in DRY areas.

Cut the top off first and the root end second...It reduces the amount of oil that gets released into the air to sting your eyes. Don't know why it works, but I learned that from Emeril and it does work.

Aww...some are more potent than others, that's all I really know, but isn't the smell of cooked onions itself just so good? My hubby cooks with onions a lot, and I love the cooking smell :)
