Box turtles can eat almost anything, and eat a ton of stuff in the wild. You can plant almost any vegetable, melon, squash, berry, leafy green, clover, alfalfa, mushrooms, etc. and it will be OK.
The problem here is that box turtles are NOT mostly herbivores- they are insectivores that eat about 75% bugs, worms, snails, etc. and only about 25% plant material.
I know that a lot of places that ought to know better don't make this clear, or even offer wrong info, but everyone who has watched wild box turtles knows that they love the bugs and are pretty reluctant to eat most plants (except mushrooms, fallen fruit, berries, and a few other things).

You could always try lettuce, I think there are a number of kinds of turtles that eat that. Something like cabbage or carrot might also work. However, DON'T try to feed it potato, because it can be poisonous.
