NASA has plenty of material about the Moon landings. I don't know if they have any refutations of the Moon hoax theory; they may feel it is not worth their while to argue with fools.

The whole Moon landing hoax theory is based on misinterpretations and erroneous assumptions. The "waving flag", for example, is only jiggling on its support because the astronauts are fiddling with it. If you look at the videos, you'll see that both astronauts have had their pictures taken with the flag and that the fold in the flag is identical in each case - hardly what you'd expect to see if it had been flapping in the breeze.

Other clues that the videos really were shot on the Moon are the behavior of the dust, and the astronauts' gait. Dust kicked up by the lunar rover doesn't hang in the air like it would on Earth, it falls immediately back to the ground. And just try putting on a space suit and running like you see the astronauts doing in the videos.

http://www.badastronomy.com has a good refutation of the hoax claims.
