In a story of Mother Teresa, this sentence appeared. The first sentence is a variant of the second. I wonder if these two expressions can be replaced with each other.

sort of....but one I take as more a path and the other more qualitative..

I think that they are both surprisingly inelegant questions for a published book, especially the first. The first of those sentences could be transliterated as "She knew the course her life would take." The second is qualitative. It refers not so much to the course her life would take as to the quality of her life, i.e. the way in which she spent each day, with its hardships, privations, joys and sorrows. The first, in other words, is the macro view, the second the micro view.

How "her life would be going" would indicate the direction she would be taking in life, based on the choices she had made.
How "she knew what her life would be like" would indicate that she was aware that she would be facing a hard life with few physical pleasures and lots of hard work.
