Go for the simple ONE handle system

I too prefer the one handle design, But if you are set on a multiple system here's some pro's and cons. The 2 handle option allows for a cleaner look than 3 handle but you are totally dependant on a little button or pull up rod on your tub spout for the diverter from shower head to tub filler. The 3 handle option can look like too much in a small shower, it 's more handle to clean and replace. But there seem to be less issues with a handle diverter rather than a tub spout diverter. And once you are plumbed in for 2 or 3 you have to stick with it forever or rip out the wall and redo later which is pretty expensive. Take your time and find exactly what you are looking for before making a commitment you will have to live with for a very long time. The internet offers a ton of options that you just won't get in a hardwarestore or big box store like Lowe's. No matter what you choose make sure to get a pressure balanced system which won't let you get scalded or freeze if the toilet is flushed and stops on the rough in which lets you shut the water off tothe shower only for repairs but the rest of the house still has water.

Three handle is better. More control--easier to use--cheaper to repair.

I hate those one handle hotel-style showers because it's difficult to get the flow and temperature just right.

I believe that a two handle system is easier to use. Young children often get all three mixed up. It also keeps you from having to take the guests on a tour saying "This knob does this and ..."

I believe the three handled setup is more practical and makes it easier to use. Separate hot, cold and shower. Sometimes those other setups confuse people, especially guests. Scalded or frozen guests is not what you want.

It is all personal preference. Which ever one you choose make sure it is a name brand. So when you do have problems parts will be available.
