No one needs to put questions in their watch list. They want to put questions in their watch list.
Maybe there is an interesting question that you would like to know the answer to. You can put it in your watch list and check back later.

Well, say someone asks a ? that you have been wondering about, and since they asked it, you can put it in your "watch list" and wait for the answers it gets, and you don't have to wast any points later for asking the question.

To keep up with the interesting people. It isn't a need, it's a quick shortcut to people or the questions. Plus, some questions are interesting enough to see what answers show up.
