Go to you bathtub with a 1 gallon bucket. Use a watch and time how long it takes to fill up the bucket. And if you know how long it was leaking, do the math. minutes to fill bucket// divide // minutes water leaking.

You will need to know the size of the broken pipe and the water pressure to determine the amount of leakage. Your water company should be able to provide the info to you at no charge.
Regarding the landlord, he should notice a dramatic increase in the bill, so, yeah, I think he will know something is amiss. Unless you have your own meter, he won't be able to determine it's your leak. . Since you are a tenant paying rent, you should inform him, and ask for reimbursement for the cost of repairs.

Impossible to know from your description how many gallons per hour - unless you know the pipe size and the flow rate. Unless each house has an individual meter there is no way to tell. You should contact him immediately though, it is his house and regardless how the pipe get broken he needs to know and get it fixed. If it is undermining the foundation it is a very serious leak.

Report it to your landlord. Unless you deliberately broke the pipe, it should be considered normal wear and tear. The longer you wait, the more damage there will be and the madder the landlord will get.

If there is a separate water bill for your house he will probably notice. Why don't you just tell him and have it fixed. If all of the houses are on the same meter he probably couldn't tell.
