I would put the money away and volunteer at an animal shelter with my fiance. We enjoy doing that anyway, so having a day free from commitment would really allow us to enjoy what we love doing anyway.

How YOU should answer--be honest. I am guessing that it's for a homework assignment. How did you get into college if you can't even answer this question? It's easy. It's simple. It's really not that tough. Your prof really isn't looking for a deep answer; s/he is looking for proper grammar and sentence structure.

Depends on how much money I had with me, to be honest.

I'd probably go shopping, look at books, grab some lunch.... And I'd take nobody with me, it'd be a nice quiet day alone.
