It's usually because of the friction of their necks rubbing on the collar while they wear it. The pilling (fuzz) will be more frequent with shirts that have natural fibers (ie. cotton), but the fuzz can easily be removed with a regular razor or an electric 'de-fuzzer' that are available at most department stores.
