Most fish have bones, and cartilage much like we do. There are a few that only have cartilage. These include sharks, rays, and skates. Note I'd hardly call sharks less evolved. Sharks have some of the most complex sensory organs found in fish. A umber even bear live young.

The more evolved fish have bones, sharks and other primitive fish have predominantly cartilage, except for teeth of course.

they do have real bones because when you eat them you must take out the bones or you will choak.
