Depending on what frequency you need to monitor, a speaker used as a sensor is an accelerometer. Any magnet hung inside a coil of wire will act as an accelerometer. Getting any ideas?

If I had to build one, I would start with a potentiometer with a crank and weight at the end. I would attach the weight to a spring. Pass a current through the potentiometer and measure the voltage.
The unit would need to be calibrated, and I wouldn't expect it to be linear.

It is easy, tie a weight to a piece of string, set the weight like a pendulum, you could use a piece of card to calibrate your pendulum as it moves from its lowest point. a pendulum would make a very simple instrument. if you wanted to make it more complex you could add dampers to the weight, basically 2 weak springs either side of the weight, Keep it simple is best.
