Roald Dahl "Withces" - it's not exactly about a mouse, but a witch turns the main character (a little boy) into a mouse... There's even a movie, with Anjelica Houston as the big witch....

'The Kitten who Thought he was a Mouse'. I can't remember who wrote it, but it's a very old children's book. There is also a short story called 'Bad Mousie' in a book called 'The Big Book of Make-Believe'.
