Why is it that when someone tells you that there are over a billion
stars in the universe, you believe them, but if they tell you there is
wet paint somewhere, you have to touch it to make sure?

As there are over a billion Stars in the Universe it is very believable - and only 27% of the population touch a wet paint sign - and by which time the paint has dried normally.

Perhaps because we can touch wet paint but we haven't yet discovered a way to touch stars (cosmic ones, that is!) while standing on the earth's surface!

Because it's a lot harder to count a billion stars than it is to touch wet paint.

Its just a simple factor of life. eg, stars ain't something we can count like coins in your pocket, but wet paint just offers a weird idea that we have to test the theory.
