Could you mean gray-scale? This is a technique to print coloured images, pages, etc in black and white. It will print it out in different shades of gray, and will be scaled according to the original picture. Hence the name gray scale. The picture still looks good, although it is not coloured.
Your printer should have options, properties or set up that you can open and select 'Grayscale printing'.
If you have winXP you can select 'Printers and Faxes' from the 'Start' menu, then select the desired printer and choose 'Select printing preferences' in the 'Printer Tasks' in the frame on the left of screen. You may need to click on the icon with two down arrows to open up the area to click 'Select printing properties'.

It generally starts to turn gray when you're running low on ink. Other than that, make sure whatever you are printing, such as text, is gray on-screen and it will be printed in gray.
As far as I know, you cant actually change the colour of black ink to gray though...

The ink in the cartridge won't change, it's all about changing the color in your document. Your computer can print many shades of grey from the black cartridge. I'd have to know what you are trying to change to grey in order to answer more specifically.
