Unless you put them inside a pot or some kind of barrier for their roots they are now a nasty invasive weed in your garden.

Next time you cut them down try pouring some full-strength Roundup brush killer onto the exposed stems or roots. That should kill it including the roots. Otherwise keep digging and pulling

The best way to eradicate bamboo is to tackle the whole clump, one stem at a time. Cut off each stem about 15cm (6") above ground level and immediately paint it with undiluted Round Up. The sap moves back down the stem and draws the poison back with it, effectively killing the whole plant. Repeat treatments may be required in some cases.

If you don't mind not being able to plant anything in that area for a while, try salt. And don't be suprised if it pops of 10 feet away from where the original plants are. Bamboo is very invasive.
