Alot of times in Hollywood they'll do a test screening of the movie before a test audience. If the test-audience doesn't like it when a character they like dies, then the studio will go back and do a re-shoot of the scene where the character will usually show back up alive. Such was the case in Jaws The Revenge.

Dr. Ian Malcolm (Jeff Goldblum) doesn't die in the novel, either. You're probably confused with John Hammond (Richard Attenborough) who DOES die in the book.
