How about just jazzing up a favorite song.
Or how about Summertime? This was Fantasias showstopper on American Idol on her season. Janis Joplin and George Benson both do it.
How about a Sade song?
How about a Norah Jones song?

Jazz songs are never easy if you want to put emotion into them and make them your own. The easiest genres are rock and country. Even though blues is based around three chords, this is one of the hardest genres to do something good and original. Jazz is the hardest genre of all to master.
