I did a project on this last year...
No one knows who discovered Jupiter, a lot of ancient people like the Chinese and the Babylonians saw it, and Galileo found some of its moons.

It's been known since before ancient times as it can be seen with the naked eye. It's not like Pluto or Neptune in which individuals discovered them.
