Hide for good or hide when not in use?
is this an indoor or outdoor pool?
assuming it's outdoor:
Hide for good just fill with soil and plant.
occasional hiding is labour intensive. Just put boards across - maybe a bridge too- and cover the boards with pebbles, rocks, pots and plants..etc

Honestly! I told Samantha not to move in next to you!
Not sure about swimming pools, but I do know how to hide a nosey neighbor where they'll never be seen or heard from again...
Now.....after you read this, let's hear you scream "Abner!" like you always do.......

Ask your neighbor across the street. She could just twitch her nose and 'poof' it will be hidden!
