I remember years ago in biology that every few months your top layer of skin is new. This was suppoedly becuase we shed. Can someone give me the typical amount of time this process happens.

I would think it is ongoing....with the dead skin shedding when dead and skin that is exposed to the sun dying sooner and renewing itself more often
