She is refered to as Mrs. Rabbit in the "Tale of Peter Rabbit" and old Mrs. Rabbit in "The Tale of Benjamin Bunny"
The two books only give the first names of Peter Rabbit, his sisters Flopsy, Mopsy & Cotton-tail, his counsin Benjamin Bunny & his Uncle (who will be Mrs Rabbit's Brother or Brother-in-law) as Old Mr Benjamin Bunny.

Mrs. Rabbit! She is Benjamin Bunny's dad's sister.
Benjamin Bunny went on to shack up with Peter's sister Flopsy. Hence the Flopsy Bunnies.
