Sunday is a major departure date from Cancun... so it is a good day but... since all archaeological sites are free on Sundays in Mexico, it sometimes has a lot of locals on this day... so that leaves Monday since most patterns of stays in Cancun are Wed, Thur arrivals and Sunday departures.

Since all resorts in Cancun have tours to Chichen Itza everyday, there are always crowds. But there is a lot of space, so you don't get jostled. The only annoying things are the kids begging for change (if you give a coin to one, the others will follow you for miles yelling "one for me") and the vendors who hound you for most of your visit.

Any day will be fine, but I think the best time of day to go is at night. They have a great laser show that bounces off the pyramids at night.
