Artificial flavourings are made using esters - organic compounds found in certain fruits. They are also synthesized in the lab by reacting alcohols and carboxylic acids. Hence you create fruit flavours in the lab - for example octyl octanoate tastes like orange, if I'm not wrong. These esters are also a far cry from the real fruit themselves.

There is something known as natural flavors as opposed to artificial flavors. Most of these flavored products contain artificial flavors and also the color in these products comes from food dyes... Artificial flavors sometimes resembles the natural flavors, it all depends on the particular product.

They are grape flavored by adding a chemical (I think it is fumaric acid) that is dirt cheap but only vaguely resembles grape flavor. The strange thing is that real grape juice gets added into other drinks for its sweetness (all natural peach juice for example) but not into flavorings for grape soda and candy.

Actually, it IS the flavor of concord grapes, that have a thick purple skin and seeds, so they are not too popular in the market, but they do taste good.
