They will run different formations depending on if they are in offensive or defensive mode. The type of formation used is determined by the game situation. Teams will often have "special formations" which they only use in obvious passing situations, short yardage or goal line situations, or formations they have developed for that particular game just to confuse the defense. There are a nearly unlimited number of possible formations. The skill in utilizing these plays can be likened to that of any game of strategy.....as in chess there are formulas for offensive and defensive play depending on what the other team is doing, but each team has their own style which is what makes the playbooks different and there are so many variables, such as injuries, that is why the game is always exciting!

No, this would be pass interference. You would have to appear as if you are going for the ball. It sucks because it puts the offense at such a clear advantage. Linebackers are not used to catching the ball, and they are usually the ones covering the RB on a screen play. It used to be that this is where you would see the best hits though.

You can make it look like he was blocking you and hit him that way but you can't if the ball is in the air, that would be pass interference. You can do it if you don't get caught but the ref is gonna be watching when the ball is released.

You cannot hit an intended receiver before the ball gets there, that is pass interference.

if the QB throws the ball backwards to the RB making it a lateral yes a player may tackle him before it gets there, but if its forward it would be pass interference

No, Pass interference if the ball in in the air. Defensive holding if it is done before the ball is thrown, provided that it is subsequently thrown.
